    Brother Monk Ciderworks

    is owned and operated by brothers, Dan and Joe Holoubek, in Indiana County, PA. They are both Navy veterans and their family has a long history of military service with their grandfather serving in WWI and father serving in WWII and the Korean War. The founders take pride in that history and commitment to service, they apply that pride to their cidermaking and winemaking. Brother Monk is a farm-based Pennsylvania licensed winery growing over 2000 cider-specific apple trees on the farm and all the rest of the fruit are sourced from Pennsylvania. All the fruits are ripened to perfection, fresh-pressed, fermented slowly, and crafted into fine cider blends, resulting in unique ciders full of refreshing, complex tastes for your enjoyment.

    We hope you enjoy tasting our ciders as much as we enjoyed making them! 


    We do not have a tasting room, but we have started planning one at the Farm, so keep checking in for more information.

    Joe

    Head Cider Maker; Joe is committed to creating the finest cider possible. That often means he also takes on the role of head janitor.

    Mike 

    Mike is also a brother and one of the staff at farmers' market and events. ,  

    Dan

    Orchardist. Dan is responsible for caring for our orchard trees, so you'll often find him spending hours wandering through the orchard,

    Tony

    Tony is also family and one of the staff at farmers' market and events. , 

     

    Our Approach

    We specialize in hand-crafted hard cider, cider-style fruit wine, and mead.  The trees we planted in our orchard were selected especially for hard cider. This includes apple varieties like Roxbury Russet, Kingston Black, St. Martins, Hewes Crab, Harrison, Bulman’s Norman, and Dabinett.  These cultivars, add a tremendous amount of complexity and richness to the ciders.   We have taken over the management of an older orchard, which has allowed us to add other apples to our hard ciders.  These apple varieties include Winesap, Cameo, Honeycrisp, Golden Delicious, and Macintosh.
